Recently we have done a series about gut health and the importance of incorporating fermented foods like homemade vegan yogurt! People who have health issues often have a need for eating good quality fermented foods to help the healing process of the gut begin. 

This recipe is “vegan” because regardless of whether you are vegan or not, dairy can be very inflammatory to the body for many people. I am always looking for options that are healthy, tasty and I can not only use with my family but suggest to my patients as well. I have tinkered and played until I created a recipe that is simple and tasty. This is one of two that we make all the time at home.

Coconut Milk Yogurt

Ingredients:

8oz. of coconut milk

1 capsule of a probiotic of your choice

Optional: 1 teaspoon of tapioca starch (if you like a thicker yogurt)

Steps:

1)   Empty coconut milk into a clean glass mason jar.

2)   Top with probiotic and stir.

3)   Close with lid and wait.

Hint: You can put it in the refrigerator the day before you decide to prepare your yogurt, it helps separate the water from the cream if you like a thicker yogurt.

Take that can of coconut milk and put it in a mason jar. (If you want a thicker yogurt drain out the water and only use the cream part of the milk.) If you want very thick yogurt you can add about 1 teaspoon of tapioca starch. Then add one capsule of a probiotic of your choice. Mix all together well. Then close the lid on the mason jar and wrap the jar in the kitchen towels so that it stays on the warm side. Leave it in a warmer area of your kitchen. Let it ferment for a minimum of 8 hours. The longer you let it ferment the more sourish tasting it will get. To me ideal is around 24 hours. Then when you are happy with it place it in the fridge! You are all done!

P.S. some probiotics can affect the taste of the yogurt, try to find a probiotic that does not have any other ingredients than the live cultures.
